When I first got into brewing, I started small and simple. Very little process control was in place, the equipment was basic and easy to use, and the beer turned out… okay. As time went on, my brewery grew organically to include more and more pieces of specialized equipment whose purposes varied, but generally involved making brewdays easier or giving me a greater degree of control over the process. This is a pretty typical evolution that homebrewers go through, and something that offers the opportunity for your brewhouse to grow in sync with your brewing skills.
After relocating to Brooklyn, I took the opposite approach. Instead of organic growth, I preplanned my system on paper, acquired my parts, and then built-out the brewery over the course of several evenings. This was an exciting and daunting task; not something I’d recommend for someone just learning how to brew.
Acquisition of Parts and Build-Out
For what seemed like weeks, strange and wonderful pieces of stainless steel began arriving at my apartment. Thanks to the folks from places like Bargain Fittings, More Beer, and Williams Brewing, finding the parts I needed was fairly easy. The most difficult item to track down was a thick walled stainless steel kettle with a multi layered bottom in a 5-gallon format. Unfortunately, most 5-gallon kettles are designed for entry level or partial boil extract brewers. I wanted something sturdy that would provide better heat dispersion and retention. I ended up with a great little kettle from Midwest Brewing that fit the bill perfectly.
The actual build-out went simply enough. It was important to diagrammatically layout how all the components were fitted out in order to procure the right fittings, but also have a pseudo installation manual for building. From there, piecing together the components was rather easy and happened quickly. The most difficult task was using a step-bit to place holes into my thick walled kettle. My cordless drill was barely up to the task. It took multiple trials and battery charges, but in the end I successfully placed two holes into my kettle’s walls. Lubricant is your friend when drilling (yes, I said that) and keeps the bit cool while cutting through the kettle walls.
The Build-Out:
It’s funny, I have built almost exactly the same system only with 42qt kettles for 5gal batches. A few of questions regarding the setup: First, how well does the second outlet (whirlpool valve) on your pump function for you in terms of isolating trub from the plate chiller and do you find it complicates the workflow with an added valve to monitor? Second, what sanitation concerns do you have for the inline diffusion stone? I have had no issues thus far with a 0.5micron stone that gets exposed to hot wort 10-15min during a recirculation. The barb end gets very hot due to conductance and you can pre-sanitize the tubing, regulator, etc. and hook it up to create a closed system pre-boil ( you may want to add a gas shutoff between barb and regulator to prevent backflow). The amount of oxygen that I can diffuse into the chilled wort is considerably higher in a short burst due to the turbulence created by the restrictions in the fittings inline, so I would recommend using it at least on higher gravity beers. Last, have you considered insulating your mash tun? I have heat shield aluminum bubble wrap doubled around my kettle and it only loses 1degree F per hour if directly fired on low. Granted, this may work better on an electric burner like I use to avoid burning the wrap (or with an immersed heating element). Great write-up, by the way.

The whirlpool circuit does a couple things. First it acts as a bleeder valve to prime the pump head. It also enables me to get all of my plumbing from the output of the pump on in place and sanitized earlier in the process and not have to fumble around with moving hoses around. I get a good strong WP with it, and a nice trub cone when I let the kettle settle for 10-15 minutes after actively whirlpooling. For beers without much hops it works quite well at keeping debris out of the plate chiller. For hoppy beers, I tend to play it safe and use hop bags. You’re right though, it is definitely another item to clean.
The main issue I had with the inline O2 was liquid backflowing through the stone and into the line headed to the O2 tank. Even with a backflow valve in place, I couldn’t figure out a way to keep the wort out of the gas side of the O2 stone.
Insulation on the mashtun is definitely something I’m considering. I’m currently losing 6-8 degrees over an hour (less for bigger mashes). My concern with the the foiled bubble wrap is catching it on fire when I direct fire. It’s definitely something I’m looking at…once I figure out something that won’t ignite.

Hi There, I’m planning to build a similar setup to oxygenate inline after my plate HX. The 0.5 micron carb/aeration stone that you found is pretty cost effective compared to the others that I’ve found. I’m curious about your backflow problem. Do you know what the wetting pressure of the stone is? That is, at which pressure do you begin to have O2 flow into the wort? I can’t imagine that you experience backflow with the O2 valve open. Do you use a check valve similar to those on corny keg connections? I just found your site today so I haven’t read everything, but I like it so far. Thanks.
Thanks for reading! Unfortunately, I have no idea what the pressure is as I don’t have a proper regulator on the O2 tank. It doesn’t take much O2 to push liquids back out of the line. A check valve is the right solution, although I haven’t figured out or installed one.
