Single Tap IPAStylistically, I find IPA to be one of the craft beers categories with the most variation. There are many popular IPAs that have almost no malt character, while others are relatively robust and judicious in their application of toasty and caramel flavors. Some are absolute hop bombs with robust flavors of citrus, pine resin, grass, spice, and tropical fruit, while others tend to portray a more nuanced hop character. All IPAs should lean towards the bitter side, but some are so excruciatingly bitter they make you wonder if you’re damaging your tooth enamel. Some IPAs are daringly dry while others retain a hint of residual sweetness. Many are lower in alcohol—and could be argued to be pale ales—while others blur the line between single and double IPA. With this recipe, I was shooting for something towards the middle, in terms of alcohol, malt, and bitterness, while taking hop flavor and aroma to an extreme level.

Tasting Notes:

Judged as a BJCP Category 14b. American IPA.

Aroma (8/12):
High level of hop aroma which prominently features grapefruit zest upfront and a touch of pine resin in the background. There is a whisper of stone fruit (peach?) in the aroma that is quite pleasant. Some grassy, dry hop characters come out as the beer warms which lends an earthy and spicy component to the aroma. The hops are perhaps a bit muddled in their presentation. The malt aroma is very low and a bit indistinct letting the hops shine. There is no perception of caramel malt on the nose. No alcohol, DMS, or other off-aromas. Very clean fermentation character with no perceptible ester.

Appearance (2/3):
The beer is a deep golden hue with hits of red that push the beer to being nearly a copper color. There is a very distinct haze, but not nearly as muddy as some commercial beers I’ve sampled. A nice off-white, sticky head persists until the beer is finished.

Flavor (14/20):
This beer has a very strong hop flavor that couples with a firm hop bitterness. The flavors are somewhat reminiscent of the white pith of a citrus fruit. There is a touch of slightly vegetal/grassy hops on the finish. The relative depth of color in this beer would make you think there would be some fairly strong malt components to the flavor. This is not the case. The beer exhibits only a hint of light toasty malt that is difficult to extract from the large amount of hop flavor. The bitterness is clean and crisp, but perhaps a bit too intense. There is a hint of residual malt sweetness that is a touch heavy.

Mouthfeel (3/5):
Medium-bodied with a firm, clean finish. There is just a hint of residual sweetness in the finish. The beer is slightly over-carbonated giving the beer a prickly mouthfeel which improves once the gas subsides.

Overall Impression (6/10):
This is a nice IPA that showcases American hops in all of their brashness and intensity. There aren’t any of the tropical notes that are found in some of the most popular contemporary examples which may detract from in its popularity with beer geeks who tend to chase the latest novel hop flavors. This beer is right in the middle of the BJCP style, but could get dinged for not having quite enough malt depending on what a particular judge is looking for. In future recipe iterations, I plan to slightly lower the hop bitterness and further dry the beer out to allow for the hop flavors to shine even more brightly. Additionally, I will likely not use Columbus again for this beer as I feel it contributed to some of the rougher hop flavors this beer exhibits.

A New Take on Single Tap IPA

In the past, I’ve had good luck brewing my IPA. My standard recipe has won a number of awards and tastes great. That being said, my attention span is short and it is time to change things up. Between the fresh 2013 hops I had ordered in bulk (from Hops Direct) and capabilities built into my current brewery, the time was nigh to make some tweaks to Single Tap.

On the brew house side, I am now able to do a pump-driven whirlpool. This allows me to better simulate the extended whirlpool often done with the best commercial IPAs. Additionally, I now have a hop back that allows for one last infusion of hops directly before going into my plate chiller to cool. Finding Amarillo hops during the 2013 brewing year was nearly impossible. I’ve overcompensated this year by purchasing massive amounts of the 2013 Amarillo crop, which this recipe has been built around. I’ve also included a small charge of Sterling hops — a tip I picked up from Mitch Steele of Stone Brewing during last year’s National Homebrewers Conference. (The idea is that the Sterling will add a bit of complexity and nuance to what is otherwise a citrus heavy hop bill.)

Bourbon County Brand Barleywine Review

Goose Island Bourbon County Brand Barleywine‘Tis the season for Goose Island’s annual release of their Bourbon County line of beers. With this year’s release, the product line has grown to include a barrel-aged English-style barleywine in addition to their very tasty imperial stout offerings. Beer geeks around the country are giddy at the thought that this beer could be of the same lineage as King Henry — many a beer geek’s White Whale. It’s been over a year since I’ve sampled King Henry, but if my memory serves me correctly, this is a relatively similar beer.

Reviewed as a BJCP Category 22C. Wood-Aged Beer (English Barleywine base).

Aroma: (10/12)
Lots of big, sticky malt dominates the aroma. Most apparent on the malt side is a rich and luscious deep caramel as well as some molasses. There is a ton of pleasant oxidized malt character reminiscent of dark fruit and tart cherry — likely a consequence of the micro-oxidation that occurred while in the barrel. There is a surprisingly light oak character that has hints of vanilla and toasted coconut, which blend well with the base beer. Some hot alcohol is apparent, but it is minimal considering the high ABV. No hop aroma.

Appearance: (2/3)
Very deep mahogany — almost black. The beer is clear with a minimal tan head. This is an attractive beer, but a few shades too dark for the style.

Flavor: (16/20)
There is a richness to the malt that fills the palate with flavors of dark caramel upfront and toasty biscuit and bread crust on the back end. Again, there is lots of oxidized malt that comes off as raisin-like in the flavor. There is some definite boozy hot alcohol, which actually helps balance the heavy-handed malt sweetness. The hop bitterness is barely enough to balance the large amount of sweet malt. The bourbon flavor is definitely present, but not nearly as intense as other beers in the Bourbon County line.

Mouth Feel: (2/3)
“Chewy” is a fitting description of the mouthfeel. The beer is slightly slick and leaves the mouth a bit tacky and sticky. The carbonation is very soft, which serves to enhance the full-bodied nature of this beer. The beer is a bit syrupy on the finish, which detracts from the overall impression of the beer.

Overall Impression: (8/10)
This is a big and intensely complex malt-bomb. If that’s what you’re in the mood for, this beer will greatly exceed your expectations. A touch more attenuation seems like it would help the beer out in terms of drinkability (if there is such a thing for a 12.1% beer). There are some prominent oxidized notes in this beer that are pleasant, but not something I’d want to enhance by aging the beer any further. This would work well as a dessert beer or replacement for something like a Sauternes paired with a Roquefort cheese.

Aroma (6/12)
Very prominent banana ester that is reminiscent of artificially flavored banana candy or even under ripe green bananas. There is a bit of sharp alcohol that merges with this and reminds me that this beer is only 3 weeks old. The pear ester that I was hoping for is present, but in quantities that are barely perceptible. The is a very pleasant round pilsner malt aroma that is probably my favorite part about this beer. A herbal / earthy hop aroma is very low, but present.

Appearance (2/3)
The beer is a hazy rich gold color. The head is persistent and white. A couple weeks in the fridge should transform this into a much brighter beer.

Flavor (15/20)
The beer has a really nice slightly sweet pilsner malt character. The malt is a bit bread-like and features a very low, but complimentary toasty note on the finish. The banana ester and alcohol that was on the nose is much more subdued on the palate. Again, the hops are perceptible, but much lower in flavor than i had hoped or would have suspected based on the recipe formulation. There is a nice clean firm bitterness that doesn’t linger and perfectly balances the malt. At the finish there is a slight mineral note that is bit chalky.

Mouthfeel (3/5)
The beer has a medium mouth feel with a nice creamy texture. The carbonation is in line with most beer styles, but could used a bump to better fit the category. No alcohol heat or astringency.

Overall Impression (6/10)
This is a very enjoyable Belgian Pale Ale. It doesn’t have the malt complexity that the style guideline would call for which would likely hurt its scores in a beer competition. The main  problem I see with the beer is that the banana ester is way too dominate. This muddies the familiar resemblance to Duvel that I was hoping for. In next iteration of this beer I need to figure out how to change my fermentation profile to better create the ester character I was striving for. Additionally, I would like to dry the beer out a bit more by mashing at a lower temperature.

Sour Mashed Berliner Weisse with Brett Trois

My first batch of Berliner Weisse left me confident that sour mashing is a viable option for creating brightly acidic sour beers in short order. I’ve had a number of wonderful sour mashed beers along with quite a few terrible ones. A lot of people proclaim that sour mashing is a bit of a crap shoot, but I believe with careful process control, you can utilize sour mashing with a high success rate. It seems that the key to success with sour mashing is creating an environment that favors the lactic acid production you’re looking for while discouraging the growth of other bacteria and yeast that can easily fowl your mash with pretty horrific off-flavors.

My primary concerns are creating an anaerobic (no oxygen) environment, maintaining temperatures above 105°F, and pre-acidifying the mash. An anaerobic environment is achieved by thoroughly flushing the fermenter with C02 gas and then sealing the lid. Temperatures are maintained by insulating the mash tun and periodic hot water additions. Pre-acidification is achieved through a healthy dose of acidulated malt at the end of the mash regiment. After a 60 hour sour mash, the liquid was very tart and clean. There was no pellicle, mold, or otherwise odd looking growths on the surface of the mash. At this point in the process, you’re looking for a bright clean acidity — more similar to yogurt  (lactic) than vinegar (acetic). If your mash smells or tastes like rotten vegetables, baby diapers, vinegar, or other funky flavors, your mash likely went off. Boiling and subsequent fermentation may drive off some of these offensive aromas, but chances are pretty slim that they will be eliminated completely.

_DSC0547After sour-mashing I retrieved the soured wort and boiled it for 30 minutes to achieve a minor reduction in volume, kill any bacteria, and achieve a slight amount of bitterness. I cooled the wort and pitched Wyeast’s German Ale strain. I have heard antidotal evidence that low pH can adversely effect yeast fermentation. I can offer my own contrary antidotal evidence — my low pH wort exhibited a very vigorous fermentation and attenuated well.

UPDATE 11/16/2013: After about 2 weeks in primary, I seem to be experiencing a pH related issue with this beer. Fermentation appeared extremely vigorous. It has however stopped at 1.010, which is most likely related to the beer’s low pH. At this point I am not comfortable bottling with a secondary Brett Trois strain. Instead, I have racked the beer to a secondary fermenter and pitched the Brett in an attempt to reach terminal gravity prior to packaging and bottle conditioning.

Wyeast describes the German Ale strain as a true top cropping yeast... I concur.

White Labs WLP644 Brettanomyces Trois – Added to individual bottles during bottle conditioning. Ended up adding it in secondary before packaging.

Water Treatment:
Carbon filtered Brooklyn water (very soft) with 2g Gypsum and 4g Calcium Chloride added to mash.

Mash Regiment:
60m – 148 °F
10m – 154 °F
10m – 168 °F

Sour mash 60 hours:
1. Complete mash regiment above. Let mash cool to 128°F. Minimize stirring and aeration of wort.
2. Add 4 oz uncrushed grain & remainder of acidulated malt (6 oz).
3. Cover mash bed with aluminum foil, purge with CO2, and seal mashtun.
4. Insulate the mash tun and let rest for 60 hours.
5. Add boiling H2O to increase sour mash temp as required to keep above 105°F.
6. After 60 hours, increase mash tun temperature to 168°F and transfer wort to kettle.

Fermentation:
1. Chill to 64°F and keep at 64°F until activity slows (1 week+).
2. Raise temp to 68°F 2 days
3. Drop temperature to 32°F over the course of 4 days. Hold at 32°F for 2 days.

Packaging:
Prime with sugar as required to achieve 3 volumes of CO2. Inoculate half the bottles with Brett Trois (WLP644) for future side-by-side comparisons. Ended up adding the Brett to secondary in bulk prior to packaging.
